OR, after you beat the final boss, is there some option that lets you, like, return to Pulse or be in Cocoon at your leisure? You can return whenever you want. Basically, it is not important what stats, accessories or weapons you have, only what abilities your main party have. So I'd say finish the story as soon as possible. It will also be easier to get the 5 stars achievement in the final boss battle with lower stats, so it's a win win.
